I mentioned in my UTEP Visitor's Day post that I had made these cupcakes with the underage prospective grad student who stayed with me. They were delicious and really really simple. Plus I had all the ingredients on hand which rarely happens for me so I double love these! The topping didn't end up being the way I wanted, but it all tastes the same, and that taste is delicious! Apple Streusel Cupcakes makes 14 1/2 tsp baking soda 10 oz/280 g jar tart applesauce 4 tbsp butter, softened generous 3/8 cup raw brown sugar 1 large egg, lightly beaten scant 1 1/4 cups self-rising white flower 1/2 tsp ground cinnamon 1/2 tsp freshly ground nutmeg for the topping generous 1/3 cup all-purpose flour 1/4 cup raw brown sugar 1/4 tsp ground cinnamon 1/4 tsp freshly grated nutmeg 2 1/2 tbsp butter Preheat the oven to 350 degrees. Everything I Need to Know I Learned from Holiday Movies

I love the whole Christmas season. I love hearing the same songs again and again. Drinking hot chocolate, red, green, silver, bells, pie, presents, Frosty, all of the things. I especially love holiday movies; they play constantly in my kitchen while I bake batch after batch of cookies, cheesecakes, and booze. Every Christmas movie has some kind of lesson so I thought I'd share a few takeaways from some of my favorites (this list is far from exhaustive). 1. Life is too short for "hellos." ( Elf ) Nothing makes me laugh quite like when Buddy answers his fathers' professional work phone by saying, "Buddy the Elf what's your favorite color?" Every time a phone rings I want to answer it that way. Sometimes I do. 2. Uncles can be the worst. ( Home Alone and Home Alone 2) Seriously, Uncle Frank is such a jackass! Quick, Quick.

I had an authentic Mexican breakfast burrito this morning. And by authentic I don't mean El Paso authentic, because frankly any Mexican food that comes out of EP is going to be authentic. This was straight out of Juarez. One of the undergrads in my lab, who speaks English but prefers Spanish, Berenise, stayed the night with her father and brother in Juarez.
